But we wanted an extra kick of fruity sweetness, so we dumped in an exotic fruit that pairs so well with summer berries. That's right, we added ripe green kiwis to the mix! We peeled and chopped hundreds of sweet green kiwis, removing the fuzzy brown skins to reveal the deep green fruit within. 

The kiwi morsels were stirred into the strawberry compote to ensure a powerful fruit combination. We stirred in a dash of water and a few cups of sugar and set the strawberries on the stove to boil. The strawberry and kiwi compote is transformed into a warm liquid candy, and is carefully poured into small candy molds.
